Spinach and Fish Balls Soup with Anchovies : Malaysian Recipe

This is simple, fast and healthy soup which can be cooked within ten minutes.
Ingredients:

A bunch of spinach, cut
3 tablespoon of dried anchovies
4 cloves of garlic, chopped
1/4 cube of chicken stock
10 fish balls
salt to taste
2 tablespoon of oil


Method:

Soak dried anchovies for 5 minutes and cut into small pieces (if using the bigger size). Soak and wash spinach thoroughly.

Heat oil and fry dried anchovies first for 3 minutes, then add garlic until both turns brown. Add two glasses of water and let it boil.

Add in the fish balls and spinach and cook for 2 minutes.

Serve hot with plain rice.

Stir Fried Beef Noodles : Singaporean Recipe

Ready in less than half an hour, this stir fried beef noodles dish is full of flavour from onions and chilli to garlic and Chinese mustard greens.
Ingredients:

600 grams dried Hokkien noodles
400 grams tender beef, thinly sliced
2 large onions, blended
4 cloves garlic, blended
2 large tomatoes, cut into 8
4 stalks of Chinese mustard greens, cut into 4" lengthwise
2 eggs
2 tablespoon chili paste
3 tablespoons oyster sauce
4 tablespoons light soy sauce
1 teaspoon garam masala
3/4 cup oil
Salt


Method:

Boil water in a large pot 1/2 full. Once water boiling, blanch noodles for 2 minutes. Put in strainer and run it under cold water for 30 seconds so it won't stick together and set it aside.

Heat oil in wok, once oil is hot add the blended onions and garlic. Add chili paste and stir till fragrant for 15 minutes.

Add beef, garam masala, light soy sauce, oyster sauce ,salt and stir for 15 minutes till beef is almost cooked.

Add the eggs and stir well and throw in the tomatoes and Chinese mustard greens. Mix well till Chinese mustard greens is wilted.

Lastly add the noodles and stir slow and evenly for last 10 minutes.

Serve hot.

Fish Ball and Spinach Soup : Singaporean Recipe

This fish balls and spinach soup is simple, refreshing and healthy which can be cooked especially on hot days.
Ingredients:

2 large onions, quartered
3 cloves garlic
6 1/2 cups of water
1 cube vegetable stock
1 teaspoon garam masala
20g bean thread noodles, soaked in hot water
A bunch of spinach, cut in 3 parts
1 large carrot, halved
2 medium tomatoes,quartered
3 large potatoes, quartered
2 tbsp light soya sauce
1 cup oil
salt
white pepper

Fish balls:
1/2 kg Mackerel fillet, skin removed
2 red chilies,chopped
1 teaspoon cornflour
1 stalk spring onion, thinly chopped
salt
white pepper


Method:

Mix all the fish ball ingredients into a large mixing bowl. Mash till paste combines together with clean hands and season well. Make medium size balls with wet hands so the paste won't stick to your hand. Place fish balls onto a clean plate and put it a side till needed.

Blend onion, garlic and 1/2 cup water in an electric mixer till smooth. Heat oil in large pot on medium high heat, add the puree mixture once oil is hot and stir till fragrant for 10 minutes.

Add 6 cup water and stock,bring to boil for 15 minutes. Season well and add garam masala, and light soya sauce.

Throw in the carrot and potatoes and let it simmer for another 15 minutes. Add bean thread noodles and fish balls slowly one by one.

Finally add the spinach stir slowly on low heat for a good 15 minutes. Serve hot with steamed rice or even enjoy it on it's own.

Sesame Chicken : Chinese Recipe

If you’re craving some amazing Chinese food or are just in the mood for something different, don’t be afraid to give this delicious Sesame  Chicken recipe a try.
Ingredients:

2 large boneless skinless chicken breasts, cut into 1" chunks
2 tablespoons raw sesame seeds
2 green onions, sliced

Marinade:
1 teaspoon chicken base
¼ teaspoon salt
½ teaspoon sesame oil
ground white pepper,  to taste
¼ teaspoon sugar

Batter:
½ cup all purpose flour
1 teaspoon baking powder
1 egg, beaten
½ cup water, or as much as needed to make batter smooth
3 tablespoons cornstarch
salt,  to taste
1 tablespoon vegetable oil

Sauce:
3 tablespoons honey
2 tablespoons sugar
salt, to taste
2 tablespoons ketchup
1 tablespoon white distilled vinegar
a sprinkle of ground black pepper


Method:

In a bowl combine all of the marinade ingredients and mix well. Add the chicken and coat evenly. Cover and marinade for 30 minutes in the refrigerator.

Meanwhile, in separate bowl combine all of the batter ingredients and mix thoroughly. The batter should be thick enough to coat the chicken but thin enough to flow around the pieces. Set aside.

Remove the pieces of chicken from the marinade and dip them into the batter to coat evenly one by one. Deep fry the chicken in batches  for about 10 minutes or until golden brown. Drain on paper towels.

In your wok combine the sauce ingredients and warm over medium heat. Bring to a boil while stirring and simmer until sauce slightly thickens.

In the wok or in a serving dish coat chicken with the sauce and garnish with sliced scallions and sesame seeds.

Stir Fried Tilapia with Lemongrass : Malaysian Recipe

Tilapia is the fifth most important fish in fish farming. Tilapia is a low saturated fat, low calorie, low carbohydrate and low sodium protein source.
Ingredients:

1 Tilapia, discard bones and cut into bite sizes
6 stalks lemongrass, crushed
2 sprigs spring onion, cut into long strips
2 fresh red chili, shredded
1 inch ginger, chopped finely
4 garlic, cut slices
Salt, fish sauce, lime juices for seasoning


Method:

Marinate cut Tilapia with chopped lemongrass, tumeric powder, salt, light soy sauce, sugar. Deep fry the marinated Tilapia and set aside.

Heat oil in a wok, saute garlic slices till golden brown and set aside.

Use the remaining oil, saute ginger, add in lemongrass, spring onion and red chili.

Add in the fried fish and fried garlic, and season with salt and fish sauce, add few drops of lime juices, quickly mix well and dish out.

Serve hot with plain rice.

Ingredients:

400g beef strips, or steak cut into thin strips
1 red chilli , deseeded and finely sliced
2 tbsp oyster sauce
handful basil leaves
2 tbsp vegetable oil


Method:

Heat a wok or large frying pan until smoking hot. Pour in the oil and swirl around the pan, then tip in the beef strips and chilli.

Cook, stirring all the time, until the meat is lightly browned, about 3 mins, then pour over the oyster sauce.

Cook until heated through and the sauce coats the meat. Stir in the basil leaves and serve with plain rice.

Tandoori Chicken : Indian Recipe

Tandoori Chicken is a highly popular Indian and South Asian dish consisting of roasted chicken, yogurt, and spices. It is traditionally cooked at high temperatures in a tandoor (clay oven), but can also be prepared on a traditional barbecue grill.
Ingredients:

4-6 chicken parts, skinned
1 tsp salt
2 tsp lemon juice
2 tsp butter, melted

Marinate ingredients:
1 tbsp tandoori powder, blended
1 tsp chili powder, blended
1 tsp ginger paste, blended
1 tsp garlic paste, blended
1/2 cup yogurt
2 tsp vinegar
1 tsp red colour powder


Method:

Slit chicken parts. Combine marinate ingredients, lemon juice and salt. Rub mixture into chicken and marinate for 1/2 hour.

Place marinated chicken pieces over a high rack. Brush with melted butter.

Grill for 12 minutes or roast in microwave for 9-10 minutes.

Serve.

Stir Fried Bean Curd : Chinese Recipe

Bean curd is a neutrally flavored product made from soybeans. Also known as tofu, bean curd is the perfect complement to dishes and can be fried, steamed, sauteed, baked, or grilled.
Ingredients:

4 bean curd
10 cherry tomatoes
2 stalks spring onion, cut into 1” length
1 inch ginger, sliced
2 cloves of garlic, chopped

Seasoning:
1 tbsp sugar
2 tbsp light soy sauce
1 tbsp vinegar
A pinch of salt to taste


Method:

Cut one piece of bean curd into 8 small square pieces. Deep fry bean curd in hot oil till golden brown, set aside.

Add red cherry tomatoes in the remaining oil, stir fry for a few minutes. Add in ginger slices and chopped garlic, and mix well.

Add in sugar, and stir fry for 1 minute. Then pour in the fried bean curd, and mix well. Season with light soy sauce, vinegar, and salt.

Cook till sauce slightly thicken, add in spring onion. Dish out and serve with steamed rice.

Stir Fried Beef with Chayote : Vietnamese Recipe

This stir fried beef with chayote is another recipe from Vietnamese cuisines. This dish is so flavorful,yummy and easy to cook. Chayotes are also rich in amino acids and vitamin C.
Ingredients:

200g tender beef, sliced thinly
1 chayote,remove skin and seed, sliced thinly
4 cloves garlic, chopped
1/2 tsp black peppercorn
1 sprig spring onion, cut into 1” length
1 tbsp fish sauce
1 tsp sugar
1/2 tsp salt or to taste


Method:

Marinate beef with fish sauce and sugar for one hour.

Heat oil in a non-stick pan, quickly stir fry beef till color changed. Set aside.

Heat little oil in a clean wok, sauté garlic till fragrant, add black peppercorn and chayote slices, cook for three mins, add little water if too dry.

Return beef to the wok, quickly mix well with chayote, add spring onion, seasoning with salt.

Dish out and serve hot with steamed rice.

3 stalks coriander leaves

Bird’s eye chili

Dressing:
3 tbsp sugar
2 tbsp fish sauce
3 tbsp lime juice


Method:

In a mixing bowl, combine all salad ingredients and toss well with the dressing ingredients.

Refrigerate until ready to use, if not serving immediately.

One of the specialty from Malaysia is yellow curry or masak lemak cili padi, which is spicy rich yellow coconut gravy that is cooked with bird's eyes chilies.
Ingredients:

500 g chicken - cut into small pieces
3 potatoes - cut into wedges
1 teaspoon salt
2 pieces dried tamarind slices
250ml thick coconut milk
500ml thin coconut milk
1 turmeric leaf
1 stalk lemon grass
Salt to taste

To be grounded:
20 bird's eyes chillies
2 cm ginger
2 cm turmeric root
8 shallots
2 cloves garlic


Method :

Rub the chicken pieces with salt and let marinate for 10 minutes.

Stir in the grounded ingredients with potatoes, dried tamarind slices, torn turmeric leaf, lemon grass and thin coconut milk into a pot and bring to a slow boil.

Add chicken pieces and simmer until the gravy thickens. Add thick coconut milk and salt to taste.

Serve with steamed rice.

Shallow Fried Fish : Malaysian Recipe

Shallow frying is a good alternative to deep frying as it uses less oil. This shallow fried fish recipe is very simple,tasty yet nutritious.
Ingredients:

3 Indian mackerel - cleaned and gutted
Salt
Oil for frying
1 large onion – cut into rings
3 bird’s eye chillies - sliced diagonally


Methods:

Liberally rub the fish, including its insides with salt, then sprinkle a handful over the fish.

Place the fish in a heat-resistant plate and set over rolling hot water if using a wok and steam for about 12 to 15 minutes.

When cooked, heat the cooking oil and shallow fry the fish until it is crisp on the outside. Remove excess oil from the pan.

With one teaspoon of oil, sauté the onion rings and bird’s eye chillies until soft and pour it over the fish.

Best serve with rice as a side dish or with congee or rice porridge.

Pandan Chicken : Thai Recipe

Pandan leaves or screwpine pandanus have a sweet, unique flavor. This pandan chicken is a very tasty dish and best serve as an appetizer or side dish.
Ingredients :

3 chicken breast or thigh , de-boned, skinned and cut into small pieces
1 tsp fish sauce
1/2 tsp ground turmeric
1/2 cup thick coconut milk
Salt, sugar and pepper to taste
1 tbsp corn flour
Large pandan leaves, for wrapping

Blended ingredients :
3 onions
3 cloves garlic
2cm knob of fresh ginger
1 stalk lemon grass, sliced finely


Methods:

Combine blended ingredients with the rest of the ingredients and mix in chicken pieces. Marinate for few hours in the fridge.

Add coconut milk and mix well to blend. Wrap two pieces of chicken with a pandan leaf and use a toothpick to secure closed.

Deep-fry wrapped pandan chicken parcels in hot oil until chicken is cooked through.

Serve immediately.

Korean Glass Noodles : Korean Recipe

This Korean glass noodles or Jap Chae is a very simple dish with a very minimal preparation, and cooking time.
Ingredients:

1/2 pound dried glass noodles
2 1/2 teaspoons sesame oil, divided
1 tbsp cooking oil
3/4 cup thinly sliced onions
2 carrots, finely sliced
2 cloves garlic, finely minced
3 stalks green onions, cut into 1″ length
1/2 cup dried wood ear mushrooms, thinly sliced
1/2 lb spinach, washed well and drained
2 tbsp soy sauce
2 tsp sugar
1 tbsp sesame seeds


Methods:

Fill a large pot with water and boil. When water is boiling, add the glass noodles and cook for 5 minutes. Immediately drain and rinse with cold water. Drain again and toss with only 1 tsp of the sesame oil. Cut noodles into shorter pieces, about 8 inches in length. Set aside.

Rehydrate the dried wood ear mushrooms in warm water for 15 minutes, and then drain. Set aside.

In bowl, mix soy sauce & sugar together. Add the cooking oil in a wok or large saute pan on high heat and swirl to coat.

When the cooking oil is hot, fry onions and carrots, until just softened, about 1 minute.

Add the garlic, green onions and mushrooms, fry 30 seconds. Then add the spinach, soy sauce, sugar and the noodles.

Fry 2-3 minutes until the noodles are cooked through. Turn off heat, toss with sesame seeds and the remaining 1 1/2 tsp of sesame oil.

Serve.
