There are many varieties of Chinese noodles. Dry Chinese noodles is the popular type and it is made of wheat flour, with or without egg. &lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://1.bp.blogspot.com/-JqIx1WaDurM/Tq5vfoiZs2I/AAAAAAAAAq8/bdXd2CrRixQ/s1600/chow-mein.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" src="http://1.bp.blogspot.com/-JqIx1WaDurM/Tq5vfoiZs2I/AAAAAAAAAq8/bdXd2CrRixQ/s1600/chow-mein.jpg" /&gt;&lt;/a&gt;&lt;/div&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;200 grams dry noodles&lt;br /&gt;100 grams chicken meat - slice thinly&lt;br /&gt;100 grams shrimps - de-shell and clean&lt;br /&gt;6 pieces Chinese mushrooms - soak in hot water and slice thinly&lt;br /&gt;250 grams mustard green or spinach - cut into 2in lengths&lt;br /&gt;1/2 medium sized carrot - slice into strips&lt;br /&gt;3 cloves garlic &lt;br /&gt;3 slices ginger &lt;br /&gt;4 tbsp cooking oil &lt;br /&gt;&lt;br /&gt;&lt;i&gt;Marinate with chicken meat : &lt;/i&gt;&lt;br /&gt;1/4 tsp salt &lt;br /&gt;1/4 tsp soy sauce &lt;br /&gt;a dash of white pepper &lt;br /&gt;&lt;br /&gt;&lt;i&gt;Marinate with shrimps : &lt;/i&gt;&lt;br /&gt;1/4 tsp salt &lt;br /&gt;1/4 tsp sugar &lt;br /&gt;&lt;br /&gt;&lt;i&gt;Seasoning: &lt;/i&gt;&lt;br /&gt;1 tsp salt &lt;br /&gt;1/2 tsp sugar &lt;br /&gt;3 tsp soy sauce &lt;br /&gt;1/4 tsp pepper &lt;br /&gt;2 cups water &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Method:&lt;br /&gt;&lt;br /&gt;Cook dry noodles in briskly boiling water for 15 minutes or according to package instructions. Mix the seasoning ingredients together for sauce.&lt;br /&gt;&lt;br /&gt;Heat up oil in a wok. Fry the sliced Chinese mushrooms first. Keep mushrooms to one side of the wok and put in garlic and ginger to fry for a few seconds. &lt;br /&gt;&lt;br /&gt;Add in chicken meat and stir-fry till colour changes. Next add in the shrimps and also stir-fry till they change color. &lt;br /&gt;&lt;br /&gt;Mix in the mushrooms and add the carrots and mustard green to fry. Pushing the contents to the sides of the wok, make a space in the center and put in the noodles. &lt;br /&gt;&lt;br /&gt;Pour the seasoning sauce over and mix thoroughly. A dash of dark soy sauce may be added to the noodles for color. &lt;br /&gt;&lt;br /&gt;Continue to turn and mix. Stir a few times and remove immediately from the heat. The seeds will foam on contact with the heat but you don’t want them to burn. Let stand for 10 minutes and then drain off the oil and discard seeds.&lt;br /&gt;&lt;br /&gt;Heat half the annatto oil in a large pot on a moderate heat. Add half the shallots, half the garlic, the lemongrass and stir until fragrant. &lt;br /&gt;&lt;br /&gt;Add the beef and sauté until the meat is lightly seared. Add the beef stock, fish sauce, soy sauce, sugar and bring to a boil.Then simmer for about 1 hour or until beef is tender.&lt;br /&gt;&lt;br /&gt;While the beef is cooking, lightly toast the star anise in a dry pan over a low heat until fragrant (about 3 minutes). Pound into a fine powder.&lt;br /&gt;&lt;br /&gt;Heat the remaining annatto oil in a small saucepan over moderate heat. Add the remaining shallots and garlic, star anise powder, curry powder and chillies and sauté until fragrant. Set aside until ready to serve.&lt;br /&gt;&lt;br /&gt;About 20 minutes before the beef is done, add carrots and cook until tender. Drain and briefly rinse noodles with cold water to keep them from sticking. Set aside.&lt;br /&gt;&lt;br /&gt;Heat oil and stir fry fresh prawns and chicken till they are half cooked, remove and set aside.&lt;br /&gt;&lt;br /&gt;Fry onions till translucent and add chopped garlic till fragrant. Add noodles and toss it with the ingredients in the wok.&lt;br /&gt;&lt;br /&gt;Add a few tbsp of water to soften the noodles. Add cooked prawns and pour fish sauce mixture and stir well and ensure that the noodles are well-coated.&lt;br /&gt;&lt;br /&gt;Add bean sprouts and vegetables, chillies and stir till well blend heat it through for a few minutes. Deep fry the chicken till half-cooked. Set it aside.&lt;br /&gt;&lt;br /&gt;Reduce oil in wok and stir-fry the blended ingredients till fragrant. Add chilli paste and curry powder, stir well until the oil floats.&lt;br /&gt;&lt;br /&gt;Then, add 2 cups of water and leave it to boil for few times. Add in the fried chicken together with the cubed potatoes, tamarind slices and salt. Add garlic, ginger, and scallions. Stir fry for about 30 seconds.&lt;br /&gt;&lt;br /&gt;Take a slotted spoon, add half of the steak, and stir fry for 3 minutes. Remove from pan and set aside. Repeat with the remaining half. Once water boiling, blanch noodles for 2 minutes. Put in strainer and run it under cold water for 30 seconds so it won't stick together and set it aside.&lt;br /&gt;&lt;br /&gt;Heat oil in wok, once oil is hot add the blended onions and garlic. Add chili paste and stir till fragrant for 15 minutes.&lt;br /&gt;&lt;br /&gt;Add beef, garam masala, light soy sauce, oyster sauce ,salt and stir for 15 minutes till beef is almost cooked.&lt;br /&gt;&lt;br /&gt;Add the eggs and stir well and throw in the tomatoes and Chinese mustard greens. Mash till paste combines together with clean hands and season well. Make medium size balls with wet hands so the paste won't stick to your hand. Place fish balls onto a clean plate and put it a side till needed.&lt;br /&gt;&lt;br /&gt;Blend onion, garlic and 1/2 cup water in an electric mixer till smooth. Heat oil in large pot on medium high heat, add the puree mixture once oil is hot and stir till fragrant for 10 minutes.&lt;br /&gt;&lt;br /&gt;Add 6 cup water and stock,bring to boil for 15 minutes. Season well and add garam masala, and light soya sauce.&lt;br /&gt;&lt;br /&gt;Throw in the carrot and potatoes and let it simmer for another 15 minutes. Add bean thread noodles and fish balls slowly one by one.&lt;br /&gt;&lt;br /&gt;Finally add the spinach stir slowly on low heat for a good 15 minutes.
