Chicken Salad with Mint, Onion, and Lemon Grass or known as Larb Gai is a light refreshing salad with a heavy accent on mint and lemon grass. Make in advance and serve chill.
Ingredients:
200g lean chicken meat, minced
1 tbsp fish sauce
1 tbsp lemon grass, finely chopped
3 tbsp water
1 1/2 tbsp lemon juice
1 onion, finely sliced
1 tsp chilli sauce, or to taste
1 tbsp shallots, finely chopped
1 tbsp coriander (cilantro), finely chopped
4 tbsp fresh mint leaves
sesame seeds for garnish (optional)
Method:
Cook minced chicken, fish sauce and lemon grass with water, stirring to separate the chicken meat.
Remove cooked chicken from heat.
Add lemon juice, onion, shallots, chilli sauce, coriander and mint leaves and toss gently.
Sprinkle in golden ground rice and toss again.
Serve chilled or at room temperature with rice and lettuce leaves.

Indian Cucumber Salad : Indian Recipe

Indian Cucumber Salad or known as Raita is one of the most popular Indian salad recipe. It is a yogurt based condiment and it is one of the coolest and healthiest salad.
Ingredients:
1 medium english cucumber, thinly sliced
1 cup yoghurt
2 spring onions thinly sliced
1 green chilli, chopped and sliced
2 tbsp finely chopped mint leaves
1 tbsp lemon juice
salt
Method:
Peel cucumber, cut in half, discard seeds and slice as preferred. Place cucumber in a colander and sprinkle with salt and leave several hours. Dry thoroughly.
Mix cucumbers with yoghurt, spring onions, chilli, and chill.
Add lemon juice to the above ingredients before chilling. Garnish with coriander leaves and serve.

Bean Sprouts with Grated Coconut Salad : Malaysian, Singaporean Recipe

Bean Sprouts with Grated Coconut Salad or known as Kerabu Taugeh in Malay is another example of many tasty salads. This one has toasted coconut as the integral ingredient.
Ingredients:
400 grams fresh bean sprouts
1 cup grated coconut
salt to taste
2-3 tbsp vinegar
4 dried chillies, soaked in hot water
5 shallots
15 dried shrimps, soaked in hot water
Method:
Bean sprouts should be blanched for 3 minutes. Then drain the water and set aside.
Grind chillies, shallots and shrimps into fine paste. Set aside.
Fry grated coconut in a pan until fragrant. Then mix with ground paste. Add salt and vinegar.
Add bean sprouts and mix well.
Serve.

1 fresh red chili, sliced thinly

2 tbsp white vinegar
2 tsp white sugar
1/2 onion - sliced
3 leaves napa cabbage - shredded
1/2 cup roasted unsalted peanuts - chopped
1 tbsp chopped garlic

1/2 lettuce
4 tomatoes,quartered
1/2 green capsicum, thinly sliced
1/4 onion, thinly sliced
2 tablespoon freshly chopped cilantro
For Salad dressing:
1 small bird's eye chili, finely chopped
juice of lime
1 teaspoon brown sugar
1 tablespoon fish sauce
1/2 teaspoon dried red chili flakes
Methods:
Grill the beef and place aside. Prepare salad in a bowl but don't add the beef as yet.
For salad dressing, add all ingredients together and stir to combine.
Arrange the grilled beef on the salad, nicely on top of the greens. When ready to be served, pour the salad dressing all over the salad.

13-14 bird's eye chillies, finely chopped or pounded
1 tbsp chilli paste
7 tbsp sugar or to taste
l tsp salt or to taste
1/2 cup lukewarm water
Methods:
Put combined ingredients in a mixing bowl. Mix well. Add shrimp powder, sesame seeds and pounded peanuts.
Dish out into individual serving bowls and serve with your choice of cut fruits.

1 small green papaya
1 red chillies
1 green chillies
¼ cup lime juice
1 tablespoon fish sauce
2 tablespoons brown sugar
1 clove garlic, finely chopped
25g dried shrimps, finely chopped
25g roasted peanuts, finely chopped
Sliced extra chillies to garnish
1/3 cup long beans,cut into 1 inch and crushed with mortar
5 cherry tomatoes,halved
Methods:
1. Peel and seed papaya and finely shred the flesh using a shredder or knife. Put in a bowl.
