Chow Mein ia also known as Chinese stir fried noodles. There are many varieties of Chinese noodles. Dry Chinese noodles is the popular type and it is made of wheat flour, with or without egg.
Ingredients:
200 grams dry noodles
100 grams chicken meat - slice thinly
100 grams shrimps - de-shell and clean
6 pieces Chinese mushrooms - soak in hot water and slice thinly
250 grams mustard green or spinach - cut into 2in lengths
1/2 medium sized carrot - slice into strips
3 cloves garlic
3 slices ginger
4 tbsp cooking oil
Marinate with chicken meat :
1/4 tsp salt
1/4 tsp soy sauce
a dash of white pepper
Marinate with shrimps :
1/4 tsp salt
1/4 tsp sugar
Seasoning:
1 tsp salt
1/2 tsp sugar
3 tsp soy sauce
1/4 tsp pepper
2 cups water
Method:
Cook dry noodles in briskly boiling water for 15 minutes or according to package instructions. Mix the seasoning ingredients together for sauce.
Heat up oil in a wok. Fry the sliced Chinese mushrooms first. Keep mushrooms to one side of the wok and put in garlic and ginger to fry for a few seconds.
Add in chicken meat and stir-fry till colour changes. Next add in the shrimps and also stir-fry till they change color.
Mix in the mushrooms and add the carrots and mustard green to fry. Pushing the contents to the sides of the wok, make a space in the center and put in the noodles.
Pour the seasoning sauce over and mix thoroughly. A dash of dark soy sauce may be added to the noodles for color.
Continue to turn and mix. Noodles are ready when well combined.
Garnish with fried sliced shallot and serve.

This chicken curry with cashew nuts recipe has such great flavour, not too spicy and simply delicious and very easy to make.
Ingredients:
1 chicken - cut as desired
3 tbsp chicken curry powder - dilute with a little water
2 potatoes - quartered
10 cherry tomatoes - whole
1 carrot - cut small
10 ladies finger - whole
5 cups water
oil to fry blend ingredients
Ingredients to blend:
1 large onion
3 garlic
1 cm young ginger
10 green chillies
1 bunch fresh coriander leaves
1 cup raw cashew nuts
1/2 cup water
Method:
Heat oil and saute blended ingredients for 10 minutes. Then add in water and let it boil.
Add in chicken, potatoes and carrots. Close lid and let boil till chicken tendered. Add in ladies fingers.
After a couple of minutes, add in cherry tomatoes and turn off the heat.
Serve warm with rice or bread.

Chicken Salad with Mint, Onion, and Lemon Grass or known as Larb Gai is a light refreshing salad with a heavy accent on mint and lemon grass. Make in advance and serve chill.
Ingredients:
200g lean chicken meat, minced
1 tbsp fish sauce
1 tbsp lemon grass, finely chopped
3 tbsp water
1 1/2 tbsp lemon juice
1 onion, finely sliced
1 tsp chilli sauce, or to taste
1 tbsp shallots, finely chopped
1 tbsp coriander (cilantro), finely chopped
4 tbsp fresh mint leaves
sesame seeds for garnish (optional)
Method:
Cook minced chicken, fish sauce and lemon grass with water, stirring to separate the chicken meat.

This black pepper prawns is one of delicious dishes that represents Singapore. You can also make this dish with chicken, crab or squid instead of prawns.
Ingredients:
600 grams prawns,deshelled or as preferred
Oil for deep frying
2 tbsp butter
2 shallots, thinly sliced
6 cloves garlic, finely chopped
2 tbsp dried prawns, grounded
1 tbsp black pepper, grounded
1/2 cup curry leaves
5 red bird's eye chillies, chopped
2 tbsp thick black soy sauce
2 1/2 tbsp brown sugar
2 tbsp oyster sauce
Method:
Fry prawns until they are fairly pink but not fully cooked, then set aside on paper towel to drain off excess oil.

10-15 ripe bananas
5 cups coconut milk
1-2 cup sugar

Vietnamese Beef Stew or Thit Bo Kho is a type of dish in Vietnamese cuisine that is braised in a thick, mildly sweet reddish-brown-colored sauce. It is usually served with steamed white rice or toasted and warm French baguette bread.
Ingredients:
3 cups beef stock
2 lb beef, cut into bite size cubes
1 tbsp Annatto seeds
4 tbsp cooking oil
2 tbsp shallots, chopped
1 tbsp garlic, chopped
3 star anise
2 lemongrass stalks, lightly bruised and cut into 2 inch pieces
2 tbsp fish sauce
1 tbsp light soy sauce
1 tbsp brown sugar
1 tbsp curry powder
2 tsp fresh or dried red chillies
4 carrots, cut into preferred size, blanched in water for 2 minutes and drained
1/2 cup Thai Basil leaves
1/4 cup small yellow onion, thinly sliced
8 sprigs cilantro, cut into 2 inch lengths
Method:
Heat oil in a small saucepan over low heat and add the annatto seeds. Stir a few times and remove immediately from the heat. The seeds will foam on contact with the heat but you don’t want them to burn. Let stand for 10 minutes and then drain off the oil and discard seeds.
Heat half the annatto oil in a large pot on a moderate heat. Add half the shallots, half the garlic, the lemongrass and stir until fragrant.
Add the beef and sauté until the meat is lightly seared. Add the beef stock, fish sauce, soy sauce, sugar and bring to a boil.Then simmer for about 1 hour or until beef is tender.
While the beef is cooking, lightly toast the star anise in a dry pan over a low heat until fragrant (about 3 minutes). Pound into a fine powder.
Heat the remaining annatto oil in a small saucepan over moderate heat. Add the remaining shallots and garlic, star anise powder, curry powder and chillies and sauté until fragrant. Set aside until ready to serve.
About 20 minutes before the beef is done, add carrots and cook until tender. Add spice mixture and mix in well.
Stir in half the basil and transfer to serving bowl and garnish with yellow onion, remaining basil, and cilantro.
Serve.

Basil is a kind of herb with small light green leaves related to the mint family. It therefore has a strong minty smell. The best rice to use for cooking fried rice is leftover rice that is kept overnight in a fridge.
Ingredients:
2 cups leftover rice
50 grams fresh shrimp, shelled and deveined
2 tbsp minced garlic
3 tsp finely chopped fresh red chillies
3/4 cup red, green, and yellow capsicum, mixed and cut into 1/2 inch squares
2 tbsp chopped onion
1 tbsp fish sauce
A pinch of sugar
A pinch of salt
1 tsp ground white pepper
2 tbsp oil
A handful of torn sweet basil leaves
Method:
Heat a wok and add the oil and spread it around till it coats the surface evenly.
Add the garlic and chillies, then stir for about 10 seconds. Then add the capsicums, onion, and shrimp.
Add a pinch of salt toss around for another 30 seconds.
Now add the rice to the wok, crumbling any big sticky blocks with your hands to ensure they're all separate.
Toss the rice and keep stirring for another two minutes. Then add the sugar, white pepper, and fish sauce.
Stir the mixture around again for another minute. Then taste the rice to check saltiness. If it's less, add some more fish sauce.
Then throw in the basil leaves into the rice. Stir the rice for another minute, then take it off the heat and serve.

Ingredients:
700 grams chicken meat,cut to bite-size pieces
2 tbsp soy sauce
1 tbsp salt
1 tsp sesame oil
1 tsp sugar
4 tbsp corn flour to coat chicken
2 cups oil for deep frying
1 tsp chopped garlic
1 tsp crushed ginger
1 can lychee, drained, syrup reserved
1 tsp red chilli flakes
sliced spring onion
Sauce:
1 cup lychee syrup
2 tbsp tomato sauce
1 tbsp corn flour, mixed with 1 tbsp water
Method:
Marinate chicken with soy sauce, salt, sesame oil and sugar for 30 minutes. Roll chicken in corn flour and deep-fry till golden brown. Set aside.
In another pan, heat 1tbsp oil over medium fire. Stir fry garlic and ginger for 1-2 minutes. Add sauce ingredients, and cook till sauce thickens.
Add the chicken, lychees and chillies. Mix well, and allow simmer for 3-5 minutes.
Garnish and serve.

Tom Kha Gai : Thai Recipe

This Tom Kha Gai or Chicken Coconut Soup works with chicken, fish and seafood such as crab, squid or shrimp.
Ingredients:
2 cups of coconut milk
6 thin slices of galangal
2 stalks of lemon grass (cut into 1 inch strips and crush)
5 fresh kaffir lime leaves (torn in half, not cut)
250 g of boneless chicken
100 grams oyster mushrooms
5 tablespoons of fish sauce
2 tablespoons of sugar
1/2 cup of lime juice
1/4 cup of coriander leaves
10 Thai chillies (Prik Khee Hnuu)
Method:
Combine half the coconut milk with the galangal, lemon grass and lime leaves in a large saucepan and heat to boiling. Add the chicken, fish sauce, mushrooms, chillies and sugar.
Simmer for about 4 minutes, or until the chicken is cooked. Add the remaining coconut milk to the saucepan and heat just to boiling.
Place the lime juice in a serving bowl then pour the soup into the serving bowl.
Garnish with the coriander leaves and serve.

100 grams oyster mushrooms
5 tablespoons of fish sauce
2 tablespoons of sugar
1/2 cup of lime juice
1/4 cup of coriander leaves
10 Thai chillies (Prik Khee Hnuu)
Method:
Combine half the coconut milk with the galangal, lemon grass and lime leaves in a large saucepan and heat to boiling. Add the chicken, fish sauce, mushrooms, chillies and sugar.
Simmer for about 4 minutes, or until the chicken is cooked. Add the remaining coconut milk to the saucepan and heat just to boiling.
Place the lime juice in a serving bowl then pour the soup into the serving bowl.
Garnish with the coriander leaves and serve.

Ingredients:
3 soft tofu, cut into square shape
1 leek, washed and sliced
1/2 carrot,cut into bite size
3 cloves garlic, sliced
8-10 prawns, shelled and deveined

Light soy sauce
Oyster sauce
Method:
Deep fry the tofu and set aside.
Heat oil in a wok, saute garlic, add in prawn and chicken meat, stir fry for a while, then add in leek.

Add in cornstarch water to thicken the gravy.

Ingredients:
500g dried rice vermicelli
200g prawns, shelled and deveined
200g chicken breast, cut into strips
1 medium size onion, sliced thinly
6 clove garlic, chopped
5 tbsp fish sauce
5 tbsp tamarind juice
4 tbsp palm sugar
200g bean sprouts and vegetables of your choice
a few stalks birdseye chili, cut into small pieces
Method:
Mix fish sauce, tamarind juice and palm sugar till sugar dissolves, set a side.
Soak rice noodles in a pot of hot water until noodles are soft enough to eat, but still firm and a little bit 'crunchy'. Drain and briefly rinse noodles with cold water to keep them from sticking. Set aside.

Ingredients :
1 whole chicken, cleaned and cut into smaller pieces ( mix with some salt and turmeric powder)
5 shallots, blended
3 garlic cloves, blended
1 inch ginger, blended
2 large onion,cut
2 tbsp chicken curry powder
3 tbsp dried chilli paste
2 large potatoes, cut into cubes
3 pcs tamarind slices
2 cups of water
salt
cooking oil
Method:
Heat oil in a wok. Deep fry the chicken till half-cooked. Set it aside.
Reduce oil in wok and stir-fry the blended ingredients till fragrant. Add chilli paste and curry powder, stir well until the oil floats.
Then, add 2 cups of water and leave it to boil for few times. Add in the fried chicken together with the cubed potatoes, tamarind slices and salt. Mix together, cover wok with the lid and leave it to boil for about 10 minutes or until the potatoes are well cooked.
Open the lid, add onion and stir well and let it simmer for another 5 minutes (the gravy will thicken by now).
Serve with steamed rice.

1 pound flank steak (sliced)
2 tsp ginger root (chopped)
2 scallions (chopped)

1 8oz can of sliced mushrooms (drained)
Marinade:
1/4 cup soy sauce
1 tsp sugar
1/4 cup water
2 tsp corn starch
2 tbsp vegetable oil
Method:
Marinate the sliced steak for about one hour.
Add oil to a pan or a wok. Add garlic, ginger, and scallions. Stir fry for about 30 seconds.
Take a slotted spoon, add half of the steak, and stir fry for 3 minutes. Remove from pan and set aside. Repeat with the remaining half. Reserve the marinade, as it is used to make the delicious sauce at the end.
Add oil and stir fry mushrooms, onion, and capsicums for 2 minutes.
Push vegetables to the sides of your pan. Pour marinade sauce into the center and stir fry until thickened and bubbly.
Blend in vegetables, add steak and heat thoroughly.
Serve with white rice.

5 hard boiled eggs (deshelled)
A handful dried chilies
2 cm cube grilled shrimp paste
1 tbsp tamarind paste (mixed with water to make juice )
1 onion (thinly sliced)
1 clove garlic (thinly sliced)
1 cube of anchovy stock
1 tbsp sugar
Salt
Half cup of vegetable oil
Method:
Soak dried chilies in hot water for 15 mins till soft. Then blend chilies with a bit of water together with shrimp paste.
Heat oil in wok, saute garlic and onions till transparent.
Add the chili paste, tamarind juice and anchovy stock together for 15-20 mins till fragrant over medium high heat.
