Vietnamese Beef Stew or Thit Bo Kho is a type of dish in Vietnamese cuisine that is braised in a thick, mildly sweet reddish-brown-colored sauce. It is usually served with steamed white rice or toasted and warm French baguette bread.
Ingredients:
3 cups beef stock
2 lb beef, cut into bite size cubes
1 tbsp Annatto seeds
4 tbsp cooking oil
2 tbsp shallots, chopped
1 tbsp garlic, chopped
3 star anise
2 lemongrass stalks, lightly bruised and cut into 2 inch pieces
2 tbsp fish sauce
1 tbsp light soy sauce
1 tbsp brown sugar
1 tbsp curry powder
2 tsp fresh or dried red chillies
4 carrots, cut into preferred size, blanched in water for 2 minutes and drained
1/2 cup Thai Basil leaves
1/4 cup small yellow onion, thinly sliced
8 sprigs cilantro, cut into 2 inch lengths
Method:
Heat oil in a small saucepan over low heat and add the annatto seeds. Stir a few times and remove immediately from the heat. The seeds will foam on contact with the heat but you don’t want them to burn. Let stand for 10 minutes and then drain off the oil and discard seeds.
Heat half the annatto oil in a large pot on a moderate heat. Add half the shallots, half the garlic, the lemongrass and stir until fragrant.
Add the beef and sauté until the meat is lightly seared. Add the beef stock, fish sauce, soy sauce, sugar and bring to a boil.Then simmer for about 1 hour or until beef is tender.
While the beef is cooking, lightly toast the star anise in a dry pan over a low heat until fragrant (about 3 minutes). Pound into a fine powder.
Heat the remaining annatto oil in a small saucepan over moderate heat. Add the remaining shallots and garlic, star anise powder, curry powder and chillies and sauté until fragrant. Set aside until ready to serve.
About 20 minutes before the beef is done, add carrots and cook until tender. Add spice mixture and mix in well.
Stir in half the basil and transfer to serving bowl and garnish with yellow onion, remaining basil, and cilantro.
Serve.

Stir Fried Beef with Capsicums

This stir fried beef with capsicums consists of sliced steak, green capsicums, and onions. A Chinese recipe that is easy to make.
Ingredients:
1 pound flank steak (sliced)
2 tsp ginger root (chopped)
2 scallions (chopped)
2 tbsp vegetable oil
1 large onion (sliced)
2 green capsicums (sliced)
4 garlic cloves (chopped)
1 8oz can of sliced mushrooms (drained)
Marinade:
1/4 cup soy sauce
1 tsp sugar
1/4 cup water
2 tsp corn starch
2 tbsp vegetable oil
Method:
Marinate the sliced steak for about one hour.
Add oil to a pan or a wok. Add garlic, ginger, and scallions. Stir fry for about 30 seconds.
Take a slotted spoon, add half of the steak, and stir fry for 3 minutes. Remove from pan and set aside. Repeat with the remaining half. Reserve the marinade, as it is used to make the delicious sauce at the end.
Add oil and stir fry mushrooms, onion, and capsicums for 2 minutes.
Push vegetables to the sides of your pan. Pour marinade sauce into the center and stir fry until thickened and bubbly.
Blend in vegetables, add steak and heat thoroughly.
Serve with white rice.

600 grams dried Hokkien noodles
400 grams tender beef, thinly sliced
2 large onions, blended
4 cloves garlic, blended
2 large tomatoes, cut into 8
4 stalks of Chinese mustard greens, cut into 4" lengthwise
2 eggs
2 tablespoon chili paste
3 tablespoons oyster sauce
4 tablespoons light soy sauce
1 teaspoon garam masala
3/4 cup oil

Method:

Ingredients:

8 red chilies
1 onion
2 inches fresh ginger
3 garlic cloves
1 stalk lemongrass
1/3 cup tamarind paste - combined with 1/3 cup warm water
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1/2 tsp chili powder
5 cups coconut milk
2 teaspoons sugar
salt
Methods:
Put the beef in the slow cooker. In a blender,combine the chilies, onion, ginger, garlic, lemongrass, tamarind paste, 1 cup warm water, and all spices. Puree until smooth, then pour over the beef.
Stir in the coconut milk and cook, covered, on the low setting for 5-6 hours. The beef will be tender and the sauce will be dark brown.
Ladle most of the sauce into a small saucepan and cook over medium high heat to reduce until slightly thickened, about 30 minutes.
Pour the sauce back in the cooker and cook on high for 30 minutes to 1 hour longer.
Stir in the sugar and season with salt to taste.
Serve with steamed rice.

1 tsp sugar
1/2 tsp sesame oil
1 tsp cornflour

Methods:
Place the beef in a medium bowl with the soy sauce, sugar, cornflour and water. Mix and leave to marinade for 30 minutes.
Heat a little oil in a deep non-stick frying pan (or wok), and then add the pineapple pieces and capsicums. Cook for 2 minutes on a med/high heat, then remove to a plate.
Heat a little more oil in the pan, then add the garlic and the finely chopped ginger and cook until fragrant.
Add the marinaded beef to the pan, stir and cook on a high heat for about 5 minutes, or until the beef is browned all over. Remove from the pan.
Combine all the sauce ingredients in the pan and bring to the boil. When the sauce boils it will thicken – at this point add the beef, pineapple, capsicums and also the spring onions to the pan.
Cook for 1-2 minutes, stirring, until all the ingredients are coated in the sauce and the spring onions have started to wilt.
Serve with plain white rice.

4 oz. bean sprouts

Methods:
Heat up a wok on high heat and add cooking oil. When the oil is heated, add the minced garlic and stir-fry until aromatic.
Add the beef, shrimp, fish balls, into the wok and stir-fry until they are half-cooked.
Add in the choy sum, bean sprouts, noodles, vermicelli and toss all the ingredients quickly with the spatula.

Put beef in a large mixing bowl. Then add soy sauce, fresh cracked peppers, fish sauce, oyster sauce, cornstarch, and sesame oil. Marinade for 3 hours.
Then add the garlic to the marinated meat. Heat a wok over high heat,put oil and wait until the oil gets really hot .
Toss in the marinated meat and stir quickly. Then throw in the broccoli.
Keep stirring and turning the meat and broccoli over. Add little water if it starts to look a little dry.

This meat and vegetable curry is a popular dish, locally known as Dalca. You will love the taste of tender curry meat with some carrots and potatoes, and a few vegetables, which can be eaten together with briyani or tomato rice.
Ingredients:
500 gm beef (cubed)
4 potatoes - cut into four parts
2 round eggplants - cut into four parts
2 carrots - cut into 1 inch cubes or rounds
8 long beans - cut into 1 inch long
6 fresh green chillis
1 cup Dhal beans - soak overnight with water
1 cinnamon stick
6 cloves
1 star anise
2 strands of curry leaves
2 cups of coconut milk
6 tbsp meat or chicken curry powder - mixed with water to form a thick paste
Blended/Pounded Items
4 garlic

1. In a big pot, pour oil until hot. Add curry leaves, cinnamon stick, star anise and cloves. Stir for five seconds.
2. Add the blended items and stir until it turns light brown.

4. After the oil has emerged, add the meat. Stir until all are coated well with the curry paste.

Fish Ball Vermicelli Soup : Chinese Recipe
Bee Hoon is also known as Rice Vermicelli. The clear soup is refreshing especially on a hot day. We can also use anchovy stock for the soup as it makes the soup tastier.
Ingredients
* 1/2 packet of rice vermicelli (approximately 150 grammes) (pre-soaked in water for 30 minutes to soften)
* 15 fish balls
* 100 grammes of beef tenderloin (sliced thinly)
* 200 grammes of choy sum (washed and cut into 6 cm lengths)
* 8 shallots (sliced thinly)
* 100 grammes of dried anchovies
* a pinch of salted chinese vegetables (tung chai)
* 3 tablespoons of palm oil
* 5 soup bowls of water
Marinade (for beef tenderloin slices)
* 2 teaspoons of light soy sauce
* a couple of dashes of white pepper powder
* 1 teaspoon of corn flour
Seasoning
* 2 tablespoons of light soy sauce
* Salt to taste
Method
Marinade beef tenderloin slices for 30 minutes. Meanwhile, boil anchovies in water for at least 45 minutes. Remove anchovies when done.
Fry shallots in oil under medium heat till golden brown. Remove fried shallots from oil and set aside.
With remaining oil in wok, stir-fry the beef tenderloin slices for 30 seconds. Add anchovy stock above and bring to boil.
Add pre-soaked vermicelli into boiling stock followed by choy sum and fish balls and let the ingredients cook for at least 2 minutes in boiling condition. The fish balls will float to surface when cooked. Add seasoning to taste.
Separate into individual bowls and sprinkle fried shallots and chinese salted vegetables prior to serving.
