Bean Sprouts with Grated Coconut Salad : Malaysian, Singaporean Recipe

Bean Sprouts with Grated Coconut Salad or known as Kerabu Taugeh in Malay is another example of many tasty salads. This one has toasted coconut as the integral ingredient.
Ingredients:

400 grams fresh bean sprouts
1 cup grated coconut
salt to taste
2-3 tbsp vinegar
4 dried chillies, soaked in hot water
5 shallots
15 dried shrimps, soaked in hot water

Method:

Bean sprouts should be blanched for 3 minutes. Then drain the water and set aside.

Grind chillies, shallots and shrimps into fine paste. Set aside.

Fry grated coconut in a pan until fragrant. Then mix with ground paste. Add salt and vinegar.

Add bean sprouts and mix well.

Serve.

Bird's Eye Chilli Prawns with Fermented Bean Paste : Malaysian Recipe

Bird's eye chilli is often refers to cili padi in Malay. Although this recipe is a hot dish, it is very tasty and would go well with a bowl of rice.
Ingredients:

15  fresh prawns
2 cloves garlic - chopped
4 cili padi - cut into halves
4 tbsp of fermented bean sauce
oil
3 tbsp water


Method:

Wash and clean prawns. Keep the shells and heads on.

Heat some oil and fry chopped garlic and bird's eye chillies. Add in the fermented bean sauce.

Add prawns and stir fry for about two minutes. Add in water if the paste too dry.

Serve with hot rice.

Coconut Sago : Malaysian Recipe

Coconut Sago or known as Sago Kelapa is one of the popular dessert available in Malaysia.
Ingredients:

1 cup of sago
1 cup of sugar
2 cup of  water
1 cup of desiccated coconut, mixed with a pinch of salt
Red food colouring


Method:

Wash and soak sago for about 20 minutes. Then drain the sago.

Put water into hot pot and let it boil,then add in sugar and a few drop of food colouring.

Let the sugar dissolve for a while. Put the sago and stir well until the sago become clear and cooked.

Put the sago in a container and let it cool down or put in a refrigerator.

Lastly cut them into preferred pieces and roll onto desiccated coconut.

Stir Fried Curry Shrimps : Malaysian Recipe

The pairing of garlic and curry powder and the curry leaves blends really well with the shrimps make this dish tastes good.
Ingredients:

250g small shrimps
4 tbsp preserved radish (chai poh), diced
1 sprig curry leaves
3 cloves garlic, chopped
1/2 tbsp curry powder
1/2 tbsp chili paste
Salt to taste


Method:

Heat little cooking oil in a non-stick pan, sauté garlic and curry leaves till fragrant.

Add in curry powder and chili paste, continue sauté till aroma.

Add in preserved radish and shrimps, cook for 1-2mins, season with salt.

Dish out and serve hot with steamed rice.

Spinach and Fish Balls Soup with Anchovies : Malaysian Recipe

This is simple, fast and healthy soup which can be cooked within ten minutes.
Ingredients:

A bunch of spinach, cut
3 tablespoon of dried anchovies
4 cloves of garlic, chopped
1/4 cube of chicken stock
10 fish balls
salt to taste
2 tablespoon of oil


Method:

Soak dried anchovies for 5 minutes and cut into small pieces (if using the bigger size). Soak and wash spinach thoroughly.

Heat oil and fry dried anchovies first for 3 minutes, then add garlic until both turns brown. Add two glasses of water and let it boil.

Add in the fish balls and spinach and cook for 2 minutes.

Serve hot with plain rice.

Stir Fried Tilapia with Lemongrass : Malaysian Recipe

Tilapia is the fifth most important fish in fish farming. Tilapia is a low saturated fat, low calorie, low carbohydrate and low sodium protein source.
Ingredients:

1 Tilapia, discard bones and cut into bite sizes
6 stalks lemongrass, crushed
2 sprigs spring onion, cut into long strips
2 fresh red chili, shredded
1 inch ginger, chopped finely
4 garlic, cut slices
Salt, fish sauce, lime juices for seasoning


Method:

Marinate cut Tilapia with chopped lemongrass, tumeric powder, salt, light soy sauce, sugar. Deep fry the marinated Tilapia and set aside.

Heat oil in a wok, saute garlic slices till golden brown and set aside.

Use the remaining oil, saute ginger, add in lemongrass, spring onion and red chili.

Add in the fried fish and fried garlic, and season with salt and fish sauce, add few drops of lime juices, quickly mix well and dish out.

Serve hot with plain rice.

Chicken Yellow Curry : Malaysian Recipe

One of the specialty from Malaysia is yellow curry or masak lemak cili padi, which is spicy rich yellow coconut gravy that is cooked with bird's eyes chilies.
Ingredients:

500 g chicken - cut into small pieces
3 potatoes - cut into wedges
1 teaspoon salt
2 pieces dried tamarind slices
250ml thick coconut milk
500ml thin coconut milk
1 turmeric leaf
1 stalk lemon grass
Salt to taste

To be grounded:
20 bird's eyes chillies
2 cm ginger
2 cm turmeric root
8 shallots
2 cloves garlic


Method :

Rub the chicken pieces with salt and let marinate for 10 minutes.

Stir in the grounded ingredients with potatoes, dried tamarind slices, torn turmeric leaf, lemon grass and thin coconut milk into a pot and bring to a slow boil.

Add chicken pieces and simmer until the gravy thickens. Add thick coconut milk and salt to taste.

Serve with steamed rice.

Shallow Fried Fish : Malaysian Recipe

Shallow frying is a good alternative to deep frying as it uses less oil. This shallow fried fish recipe is very simple,tasty yet nutritious.
Ingredients:

3 Indian mackerel - cleaned and gutted
Salt
Oil for frying
1 large onion – cut into rings
3 bird’s eye chillies - sliced diagonally


Methods:

Liberally rub the fish, including its insides with salt, then sprinkle a handful over the fish.

Place the fish in a heat-resistant plate and set over rolling hot water if using a wok and steam for about 12 to 15 minutes.

When cooked, heat the cooking oil and shallow fry the fish until it is crisp on the outside. Remove excess oil from the pan.

With one teaspoon of oil, sauté the onion rings and bird’s eye chillies until soft and pour it over the fish.

Best serve with rice as a side dish or with congee or rice porridge.

500 grams tender beef - sliced
2 onion - sliced
4 garlic - chopped
1 tsp ground black pepper
1 tbsp turmeric powder
1 tbsp ground coriander
1 tbsp ground cumin
5 tbsp oil
salt to taste


Methods:

Marinade beef with black pepper,turmeric,coriander and cumin for 20 minutes.

In a wok, heat oil on medium. Add in onion and garlic. Stir fry until soft and browned.

Then add beef,seasoned salt and cook for 10 minutes until browned and the oil merge.

Serve with steamed rice.

Fried Fish with Chili Paste : Malaysian Recipe

This fried fish with chili paste recipe uses pounded dried chilies which is very simple and tasty. This tasty dish is really good to go with plain white rice.
Ingredients:

4 Mackerels or any preferred fish
2 tbsp vinegar
salt, to taste
sugar, to taste
3 tbsp oil

to be pounded:
2 garlic
1 big onion
50gm dried chillies (soak in hot water until tender)
1 tsp shrimp paste


Methods:

Marinade fish with salt and turmeric powder. Stir fry the fish until crispy. Take them out and put in a plate.

Heat a pan and put oil and add the pounded ingredients. Stir well until the oil submerge from the mixture. Add some sugar, salt and vinegar. Let the mixture thickens a bit.

Add the fried fish and stir well until all are well coated.

Take the fish out and serve with white rice.

Seafood Hokkien Char is a stir-fried noodles dish in a savory sauce. This is one of easy Malaysian recipes and it is also very tasty dish.
Ingredients:

6 oz. vermicelli -soaked in warm water until soft, drained
6 oz. yellow noodles -rinsed with cold water, drained
6 shrimp -shelled and deveined
4 fish balls -cut into slices
2 oz. beef -cut into slices
2 oz. choy sum -cut into 2-inch lengths
2 cloves garlic -minced
4 oz. bean sprouts
2 1/2 tablespoon soy sauce
1 1/2 tablespoon sweet soy sauce
3 dashes white pepper powder
2 tablespoons oil
3/4 cup water
Fried shallot crisps


Methods:

Heat up a wok on high heat and add cooking oil. When the oil is heated, add the minced garlic and stir-fry until aromatic.

Add the beef, shrimp, fish balls, into the wok and stir-fry until they are half-cooked.

Add in the choy sum, bean sprouts, noodles, vermicelli and toss all the ingredients quickly with the spatula.

Add the soy sauce, sweet soy sauce, water, pepper powder, and keep stirring until the noodles are cooked through (make sure not to overcooked the noodles).

Dish out and garnish with some fried shallot crisps and serve.

Laksa Prawn Soup : Malaysian Recipe

This hugely popular coconut-based noodle soup is prepared using the spicy laksa paste, made from lemongrass, garlic, chilli and almonds. The mild coconut offsets the kick of the laksa paste perfectly.

Ingredients:

To be blended:
2 roughly chopped cloves of garlic
2 red chillies
4 shallots, roughly chopped
1 stick lemongrass (discard outer layer)
3cm piece of ginger
50g ground almonds
1 tbsp fish sauce

Soup:
Whole raw prawns-remove the heads and shells but leave the tails on
200g noodles
3 tbsp blended paste (see above)
2 tbsp fish sauce
3 tbsp vegetable oil
1 tsp sugar
400ml coconut milk
Coriander (fresh)
1/4 cucumber, cut into strips


Methods:

Put the prawn shells and heads into a pan with 700ml water and leave to simmer for 30 mins to make a stock.

Strain the prawn stock and get rid of the solids. Heat the oil in a pan over a medium heat before frying the prawns for 2 minutes.

Add 3 tablespoons of laksa paste and fry for a further 2 minutes.

Pour in the coconut milk, lime juice, fish sauce, sugar and shellfish stock and allow to simmer gently.

Blanch the noodles in boiling water for a couple of minutes. Drain the noodles and pour over the prawn broth.

Serve with a garnish of cucumber and coriander.

This is another style of cooking sweet and sour prawns without adding chili sauce which is also simple and delicious.
Ingredients:

300 gram of prawns
1 cm of ginger -sliced
1 large onion -quartered
1 stalk spring onion -cut
30 ml warm water
5 tablespoons oil

Seasoning:
3 tablespoons tomato ketchup
1 tablespoon sugar
a pinch of salt


Methods:

Heat oil in wok and fry the prawns for 30 seconds till shell completely turned to red or cooked. Dish out and set aside.

Remove oil from wok leaving approximately 2 teaspoons of oil in the wok. Saute the onions and ginger till fragrant.

Return prawns to wok, add seasoning and water. Stir well to coat the prawns. Sprinkle spring onions onto the prawns before dishing out.

Serve with steamed rice.

Cucumber and Carrot Acar : Malaysian Recipe

This cucumber and carrot acar goes very well with briyani rice and can be kept in a refrigerator for about a week.

Ingredients:

1 cucumber
1 carrot
2 cloves garlic, chopped
5 small onions,cut into wedges
3 tbsp vinegar
Salt and sugar to taste
1/4 cup water
1/2 tsp tumeric powder
1 red chili
1 green chili
1 tbsp chili flakes,optional
1/2 tsp mustard seeds
3 tsp roasted sesame seeds


Methods:

Cut cucumber and carrot into thin strips, about 1-2 inches strips. Soak in salt water. Slice chilies into thin and long stripes.

Heat some oil in pan. Sautee garlic till fragrant.

Add in turmeric powder. Add in water and vinegar. Let it boil.

Add in cucumber, carrot, big onion, chili flakes,sesame seeds and mustard seed. Mix well for about 4 minutes. Season with salt and sugar.

Mix and stir and remove from heat. Serve with briyani rice.

Tamarind Fish Curry : Malaysian Recipe

Tamarind Fish Curry or Gulai Tumis is a hot and sour curry which is so appetizing and addictive especially the gravy.. This traditional Nyonya dish features a classical mix of sweet, sour and spicy flavors, also a great a accompaniment to rice.
Ingredients:

Grounded:
160g shallots
12 g galangal
6g peeled garlic
3 stalks lemongrass (sliced)
2 tsp tumeric powder
20 dried chillies (soaked in hot water for 15 minutes and drained)
16g shrimp paste
1/2 cup oil
3 tbsp tamarind pulp
2 1/2 cups water
salt to taste
sugar to taste
1 bud ginger flower (halved)
800g stingray or pomfrets (cut)
8-10 ladies fingers


Methods:

Heat in oil over low fire and saute ground spice paste till oil and paste separates and fragrant.

Mix the tamarind pulp with water and strain the water to get tamarind juice. Add in to the spice paste and bring it to boil on slow fire. Simmer for about 10-15 minutes.The colour of the curry is dependent upon the color of turmeric and chillies.

Add in ginger flower,lady's fingers and fish. Simmer for 5 minutes or until fish is cooked.

Served with hot rice.

This chicken stew recipe is very simple using potato,carrot,soy sauce and oyster sauce. This quick and simple recipe is perfect for a main course or side dish.
Ingredients:

1/4 chicken, cut into pieces
1 potato, cut into bite-sized pieces
1 carrot, cut into bite-sized pieces
1 onion, sliced

Seasoning:
2 tbsp oyster sauce
2 tbsp soy sauce
Water
Corn starch


Methods:

Marinate chicken with soy sauce and leave aside. Boil carrot and potato until soft and leave aside.

Fried onion until slightly brown. Stir in chicken and fry until half cooked.

Stir in potato and carrot and stir fry for 3 minutes. Add in oyster sauce. Add in water enough to fill dish.

Add in corn starch to thicken. Add in salt to taste.

Serve with hot rice.

Chili Fried Squid : Malaysian Recipe

This Chili Fried Squid or known as Sambal Sotong in Malaysia is simply a delicious dish and easy to prepare. It can be served with steamed rice and other side dish.

Ingredients :

500g squids
2 tbsp tamarind pulp
1 stalk of lemongrass, peeled and sliced
1 garlic clove, crushed
4 dried red chilies, soaked and drained
1 tsp shrimp paste
1 onion, chopped
2 tbsp peanut oil
1/2 tsp salt
2 tsp palm sugar or brown sugar


Methods :

Clean the squid. Cut and set aside, with the tentacles.

Soak the tamarind pulp in 125ml boiling water and leave for 5 minutes. Knead to dissolve, then strain the tamarind water and set aside.

Grind, pound or blend the lemongrass, garlic, drained chilies, shrimp paste and onion together to make a paste.

Heat a wok until hot, then add the oil. When the oil is hot, add the blended paste and stir-fry for 2 minutes.

Add the tamarind water, salt and sugar and stir-fry for 3 minutes. Add the squid meat and tentacles and stir-fry over high heat for 3-4 minutes, until cooked but still tender.

Serve this spicy chili fried squid with steamed rice.

Prawn Noodles : Malaysian Recipe

Ingredients:

300 gm yellow noodle
12 medium size prawns
2 tomatoes, sliced and blended with 500ml of water into tomato puree
8 cloves of garlic, chopped
3 tbsp of cooking oil

Seasoning:
2 tbsp of chili paste
4 tbsp of tomato sauce
light soy sauce and sugar to taste.

Garnishing:
5 leaves of lettuce, thinly sliced
2 eggs, hard boiled and sliced
Fried crispy shallot
2 calamansi lime, halved



Method:

1. To prepare the noodle, just add the yellow noodle to boiling water and cook for around 5 minutes until soft. Then, rinse in fresh water and pour onto plates.

2. Add oil to the heated wok and stir fry the chopped garlic till fragrant. Pour in the prawns and stir fry for 2 minutes. Add some light soy sauce and tomato sauce continue to stir fry for another 1 minute.

3. Add the chilli paste and continue to stir fry for a while.

4. Pour in the tomato puree. Let it simmer for roughly 5 minutes. Add sugar and light soy sauce to taste.

5. Off the fire, and pour the sauce over the cooked noodle. Garnish with lettuce and hard boiled egg.

Fish Floss : Malaysian Recipe

Fish Floss or known as Serunding Ikan in Malaysia,is an appetizer, a side dish, a sandwich filler. It can be eaten as a topping for fried rice, with steamed glutinous rice or with bread for breakfast or as a snack. This fish floss or serunding ikan is a perfect topping or filling and it makes any dish come alive.


Ingredients:

6 mackerels-poached,removed bones and finely crushed

Blended:
6 medium onions
4 garlic
1 inch ginger
1/2 inch galangal
2 stalks lemon grass (white part only)
6 dried chillies-soaked in hot water till soft then drained

1 tbsp sugar
250 ml coconut milk
salt


Methods:

Heat up a wok and put all the ingredients and cook. Stir and mix.

Let it cook on the stove on small to medium heat, stirring now and then to prevent burning so that the floss browns evenly.

Cook until it becomes drier and it is no longer wet.

Total cooking time is about 2-3 hours. Remove and let it cool completely once it cooked.

Store fish floss or serunding ikan  in an airtight container and put in a fridge. It will last for months.

Malaysian Crepes : Malaysian Recipe

This Malaysian Crepes or Roti Jala is a typical Malaysian crepe or pancake that is serve with any type of curries or rendangs instead of rice. If you cannot find a Jala cup, simply find a plastic cup and poke about 1 to 2 mm holes at the bottom.

Ingredients:

4 cups coconut milk
450 grams plain flour (sieved)
1 teaspoon salt
2 eggs
drop of yellow food coloring (optional)
ghee or cooking oil to grease pan


Methods:

Put flour and salt in a bowl. Make a well in the center.

Add coloring to coconut milk and pour 1/2 the milk into the flour. Stir well, drawing in flour from the sides.

When mixture is smooth, add rest of the milk. Stir well. Strain batter using a ladle to “push” batter through the strainer. Batter must be neither too thick nor thin.

Heat pan. Brush pan with ghee or cooking oil. Dip Jala Cup into batter and quickly pour batter into pan in circles till a lacy pancake is formed.

While pancake is cooking, dab a little oil over it. Remove from heat as soon as firm.

Bring 2 sides of the crepes or pancakes to meet at the centre. Do the same with the other 2 sides. Fold once more to form a small roll.

Arrange Roti Jala on a plate.
