This is simple, fast and healthy soup which can be cooked within ten minutes.
Ingredients:
A bunch of spinach, cut
3 tablespoon of dried anchovies
4 cloves of garlic, chopped
1/4 cube of chicken stock
10 fish balls
salt to taste
2 tablespoon of oil
Method:
Soak dried anchovies for 5 minutes and cut into small pieces (if using the bigger size). Soak and wash spinach thoroughly.
Heat oil and fry dried anchovies first for 3 minutes, then add garlic until both turns brown. Add two glasses of water and let it boil.
Add in the fish balls and spinach and cook for 2 minutes.
Serve hot with plain rice.

Lady's Fingers with Anchovies

Another simple dish to try out - Ladies Fingers with Anchovies.
Ingredients:
15 pieces of lady's fingers (sliced as preferred)
2 tablespoons of dried anchovies (rinsed quickly in water)
4 shallots (sliced thinly)
2 cloves garlic (chopped finely)
4 tablespoons oil
Salt and sugar to taste
Methods:
Heat up 2 tablespoons of oil in wok and fry shallots till golden brown. Remove fried shallots aside. Remove oil into a suitable container.
Wash wok and heat it up again with the other 2 tablespoons of oil. Fry anchovies till golden brown. Remove fried anchovies and set aside. Discard oil and wash wok.
Heat wok and return the 1st batch of oil used to fry the shallots into the wok. Add garlic and saute for 10 seconds.
Add ladies fingers and seasoning and stir fry till desired softness. Sprinkle some warm water to keep it moist. Add in anchovies and stir well prior to serving.
Garnish with fried shallots and serve with rice.

Sataw Bean or stink bean or petai in Malay,are an acquired taste, but are popular in Laos, southern Thailand, Burma, Malaysia, Singapore, Indonesia, and northeastern India. They are best when combined with other strongly flavoured foods such as garlic, chili peppers, and dried shrimp.
Ingredients:
1 cup stink beans,peeled
1 cup dried anchovies
1 onion,sliced
Salt & sugar to taste
1/2 cup tamarind juice
Grounded ingredients:
20 dried chillies
5 shallots
2 cloves garlic
2 tsp shrimp paste granules
Methods:

This stir fried french beans with anchovies chili paste is popular in Malay cuisine. It is cook with anchovies and chili shrimp paste which is extremely versatile and the chili shrimp paste is a great base for many dishes from vegetables like water spinach, stuffed in fish and used in fried rice.
Ingredients:
1 cup dried anchovies, rinsed in water and drained
3 cloves garlic, minced
1 packet of french beans, sliced at an angle
1 tsp tamarind juice
A pinch of salt
Chili shrimp paste-pounded:
6 shallots, peeled
8 red chilli peppers - remove seeds for less spiciness
1-2 tbsp of dried shrimp, soaked in water briefly
1-2 tbsp of shrimp paste
Methods:
After preparing the chili shrimp paste, set aside.
Blanch the french beans in hot water for a quick minute. Remove from water and drain.
Heat about 1 tbsp of oil in a wok or pan and saute the garlic until fragrant. Then add about 4 tbsp of the prepared chili shrimp paste and tamarind juice and stir-fry for about 1 minute.
Add the anchovies and stir quickly to coat. Finally, add in the blanched french beans and stir for about 1 minute to coat well.
Add a pinch of salt if required. Serve hot with steamed rice.

Jungle fern is a fern and locally known as midin, milin or bilin or pucuk paku in Malay. A special wild fern that grows on the island of Borneo. It tastes crisp and delicious. It has a crispy texture and tastes very good.
Ingredients:
1 bundle midin
3 tbsp anchovies - soak in hot water for few seconds
1 red chili - sliced
3 shallots - chopped
2 tbsp soy sauce
1 thumb size shrimp paste - dissolve with 3 tbsp water.
Methods:
Clean midin, pick only tender parts of the stalks. Set aside.
Heat 3 tbsp of cooking oil in a wok, fry in together shallots,chili and anchovies and bring chopped shallots to brown while anchovies to golden crispy.
Pour in dissolved shrimp paste and soy sauce, mix well over medium-high heat until the water almost evaporated but not too dry. Reduce heat and dump in midin and stir fry for 30 seconds.
Dish out and serve hot.

Dried anchovies or known as ikan bilis is commonly used in soups or fried with sambal and served with nasi lemak. This crispy anchovies can be eaten as a snack or side dish. This addictive snack is crispy,crunchy and delicious.
Ingredients:
3 cups of dried anchovies (soaked in cold water for 15mins and drained to remove excess salt. Refrigerate for an hour or so.)
5 garlic (washed and crushed with the skin)
2 onions (finely sliced)
5 chopped bird's eye chilli.
1 tbsp tamarind paste or 2 tbsp of lemon juice
Oil for frying
Dried shallots for seasoning
Sugar to taste
Methods:
Deep fry the anchovies until brown and crispy.
In another pan, use the same oil to fry the onions until slightly brown.
Add in garlic.
Then, add the tamarind juice or lemon juice.
Add the chillies.
Lower the heat and stir fry all the ingredients until the mixture becomes quite dry and light in texture.
Finally, add the fried anchovies and mix well. Then add the dried shallots and mix thoroughly.
Remove from the wok and serve.

150 grammes of soy bean sprouts (remove root)
40 grammes of anchovies
3 cloves garlic (chopped finely)
Some warm water
3 tablespoons oil
Seasoning
2 teaspoons light soy sauce
salt to taste
1 teaspoon of white pepper powder
Method:
Rinse anchovies and drain dry.
Heat oil in wok and fry the anchovies till golden brown. Remove and set aside.
Clean the wok, heat up 1 tablespoon of oil and add garlic. Stir fry for about 5 seconds on high heat, add soy bean sprouts and stir fry briskly.
Add seasoning and sprinkle some water to keep moist. Do not pour water as this would make the dish soggy.

Fry the ikan bilis until crisp and put aside. Grind the prawn paste together with shallots, garlic, deseeded dried chilies. Slice the bombay onion into rings. Heat 2 table spoons oil in a pan and fry the ground ingredients until fragrant.
Add in the onion rings. Add tamarind juice, salt, sugar. Cook, stirring occasionally until the gravy thickens. Add in the ikan bilis and mix well. Serve with steaming hot coconut rice (Nasi Lemak).
