Kailan with Salted Fish : Thai Recipe


Ingredients :
1 salted fish (cut into bite-sized pieces)
400g kailan (cut into 2 cm length)
3 tablespoons oyster sauce
2 teaspoons chilli sauce

6 chili padi / bird chillies (bruised)
Oil for stir-frying
100ml water
Sugar, salt to taste
Ground Ingredients :

4 cloves garlic
3 shallots
2cm piece young ginger
2cm piece dried shrimp paste
50g dried prawns




  1. Heat oil. Put in the ground ingredients, bird chillies and salted fish. Stir-fry till fragrant.
  2. Add chilli sauce, oyster sauce, sugar, seasoning, kalian stems and water.
  3. As soon as the kailan stems are tender, add in the kalian leaves and stir till the gravy boils. Dish up and serve while still hot.
